Red velvet cake is a perfect cake for Halloween with it’s deep red colour and deliciously moist texture! Red velvet cake is one of my favorite recipes and these cupcakes can also be found in my Finnish language baking book Emma’s cake book.
RED VELVET HALLOWEEN CUPCAKES
1 1/4 cup flour
3/4 cup sugar
1 tbsp cocoa
1 tsp vanilla sugar or 1/2 tsp vanilla extract
2 tsp baking powder
A pinch of salt
2 eggs
1/2 cup milk
2 tsp white vine vinegar
1/2 cup vegetable oil
Red food coloring
CREAM CHEESE ICING
75 g butter at room temperature
1/2 cup icing sugar
1/2 tsp vanilla sugar or 1/4 tsp vanilla extract
2 tsp milk at room temperature
200 g cream cheese
SUGAR GLASS
1/2 cup sugar
1/4 cup water
INSTRUCTIONS
Preheat oven to 350 degrees F (175 degrees C). Line a cupcake tin with paper liners. Mix all the dry ingredients. In a separate bowl, mix eggs, milk, white wine vinegar, vegetable oil and food coloring. Add dry ingredients and mix until mixture is smooth. Divide the batter into cupcake tins and bake in the middle of oven for about 17 minutes or until a tester comes out clean. Transfer the cupcakes on a wire rack to cool.
Beat butter, icing sugar, vanilla and milk with an electric mixer until very pale and fluffy. Add cream cheese and transfer into a piping back with a round nozzle. Pipe the icing on cooled cupcakes.
Bring water and sugar to a boil in a saucepan stirring until sugar has dissolved. Let boil on medium heat until the colour is light golden around the edges. Pour the mixture on a baking tray covered with a sheet of baking paper. Spread the mixture to make a very thin layer. Let cool and brake into pieces.
Color the suryp with food coloring.
Decorate the cupcakes and enjoy!
