This simple flavour combination of meringue, whipped cream and passion fruit is surprisingly lovely! Little meringue nests are perfect for Easter.
3 egg whites
2 1/4 dl caster sugar
1 dl whipping cream
1/2 tbsp sugar
1/2 tsp vanilla sugar
3 passion fruits
1/4 dl almonds
Preheat the oven to 90 degrees celsius. Whip the egg whites until foamy. Add the sugar a little at the time constantly mixing with an electric mixer.
Transfer the meringue into a piping bag with a star nozzle. Pipe the meringue on a baking tray lined with baking paper. Bake in the middle of the oven for 1 1/2 hours and turn off the oven. Let the meringue dry in the oven until it’s cool.
Whip the cream and add sugar and vanilla sugar. Fill the meringue with cream and passion fruit. Decorate with almonds.
