Mocha Cakes

I created this recipe based on a traditional Finnish mocha sheet cake that has been one of my favorites already from my childhood. These mocha cakes are a bit easier to make because like all my Mix & Bake recipes, an electric mixer is not needed!

These small Mocha Cakes are baked in a cast aluminium cake pan which makes the surface crunchy and the cakes are moist and delicious in the middle. Cover these small chocolate cakes with an easy mocha icing.



Mocha Cakes

  • Prep Time: 30 min
  • Cook Time: 25 min baking
  • Total Time: 55 minutes
  • Yield: 12 pieces 1x

  • 1 egg
  • 1 dl milk (¼ cup + 3 tbsp)
  • 1 1/2 dl vegetable oil (½ cup + 2 tbsp)
  • 3 dl all-purpose flour (1 1/4 cup)
  • 2 dl granulated sugar (¾ cup + 1 tbsp)
  • 2 tbsp cocoa powder
  • 1 tsp vanilla sugar
  • 1⁄2 tsp baking powder
  • 1/4 tsp salt


  • 50 g melted butter (1.75 oz)
  • 1⁄2 dl coffee (3 tbsp + 1 tsp)
  • 4 dl icing sugar (1 1/2 cup + 3 tbsp)
  • 1/4 dl cocoa powder (1 tbsp + 2 tsp)
  • 1 tsp vanilla sugar


Preheat the oven to 175 degrees celsius (347 °F). Butter and flour the cake tin with all-purpose flour. Mix the egg, milk and vegetable oil. Mix all the dry ingredients and add them into the dough through a sieve. Pour the dough into the tin and bake in the middle of the oven for about 25 minutes.

Mix all the ingredients for the icing and pour the icing on the cooled cakes.


You can also make the cakes in a regular muffin pan.
