Mix & Bake Mocha Cake

This easy chocolate cake looks beautiful with simple pipings that I made with one of my favorite piping nozzles. The Mix & Bake Mocha Cake combination of cream cheese, cocoa and coffee is simply delicious!



1 h + 50 min baking + 20 min decoration
8-10 pieces

4 dl all-purpose flour
3 dl granulated sugar
3/4 dl cocoa powder
1 tbsp baking powder
2 tsp vanilla sugar (or 1/2 tsp vanilla extract)
1/4 tsp salt
1 dl milk
1 dl coffee
2 dl vegetable oil

1/2 dl coffee

150 g butter at room temperature
1 1/2 dl icing sugar
3/4 dl cocoa powder
2 tbsp coffee
1/2 tsp vanilla extract
400 g cream cheese
1 1/2 dl icing sugar

50 g dark chocolate
2 tsp vegetable oil

50 g milk chocolate
golden sprinkles



Preheat the oven to 175 degrees C. Butter and line two 15 cm size cake pans. Mix all the dry ingredients. In another bowl, mix the eggs, milk, coffee and the vegetable oil. Add the dry ingredients through a sieve. Pour the mix into the tins and bake on the lowest level of the oven for about 50 minutes. Cover the cakes with cling film to cool.

Using an electric mixer mix together the soft butter, icing sugar, cocoa powder, coffee and the vanilla extract and whip until fluffy. Mix together the cream cheese and the icing sugar. Add the cream cheese mix quickly into the cocoa mix mixing only until the mixture is evenly combined.

Level the cake tiers and cut the cakes into two layers. Transfer the filling into a piping bag with a large star nozzle. Fill the cake on a serving plate. Brush the cake tiers with some coffee while filling the cake.

Melt the chocolate and add the vegetable oil to make the chocolate sauce. Heat the milk chocolate bar in the microwave for a couple of seconds and use a cheese slicer to make the chocolate curls.

Decorate the cake with chocolate sauce, chocolate curls and some golden sprinkles.
