Easy Almond Caramel Cake

Tosca cake is a traditional Finnish cake covered with a really delicious layer of caramelized almonds. My recipe is a little bit different and there is no need to use an electric mixer. Just mix all the ingredients in a bowl and pour into the cake pan. The texture of the cake is still soft and moist. I also made the almond caramel a little bit easier and there’s only three ingredients needed. I hope you’ll enjoy this cake at your coffee table!



Easy Almond Caramel Cake

For the cake:

  • 100 g butter (3.5 oz)
  • 1/2 dl milk (3 tbsp + 1 tsp)
  • 2 eggs (medium size)
  • 2 dl all-purpose flour (3/4 cup + 1 tbsp)
  • 1 1/2 dl sugar (1/2 cup + 2 tbsp)
  • 2 tsp baking powder

For the almond caramel:

  • 100 g butter (3.5 oz)
  • 1 dl sugar (1/4 cup + 3 tbsp)
  • 100 g flaked almonds (3.5 oz)


  1. Preheat the oven to 200 degrees celsius (392 °F).
  2. Butter and line a 20 cm size springform pan.
  3. Melt the butter and add the milk and the eggs.
  4. Mix all the dry ingredients and add them into the dough through a sieve.
  5. Pour the dough into the pan and bake in the middle of the oven for 15 minutes.
  6. Prepare the almond caramel while the cake in baking.
  7. Melt the butter in a sauce pan and add the sugar and the almond flakes.
  8. Cook for one minute and let cool a bit mixing every now and then.
  9. Spread the almond caramel on the cake and bake for 7 more minutes.
