Easy Almond Caramel Cake

Tosca cake is a traditional Finnish cake covered with a really delicious layer of caramelized almonds. My recipe is a little bit different and there is no need to use an electric mixer. Just mix all the ingredients in a bowl and pour into the cake pan. The texture of the cake is still soft and moist. I also made the almond caramel a little bit easier and there’s only three ingredients needed. I hope you’ll enjoy this cake at your coffee table!

For the cake:
100 g butter
1/2 dl milk
2 eggs (medium size)
2 dl all-purpose flour
1 1/2 dl sugar
2 tsp baking powder

For the almond caramel:
100 g butter
1 dl sugar
100 g flaked almonds



Preheat the oven to 200 degrees celsius.
Butter and line a 20 cm size springform pan.
Melt the butter and add the milk and the eggs.
Mix all the dry ingredients and add them into the dough through a sieve.
Pour the dough into the pan and bake in the middle of the oven for 15 minutes.
Prepare the almond caramel while the cake in baking.
Melt the butter in a sauce pan and add the sugar and the almond flakes.
Cook for one minute and let cool a bit mixing every now and then.
Spread the almond caramel on the cake and bake for 7 more minutes.

A traditional Almond Caramel Cake can be faster and easier to make.
